CARLA EASTMAN
Owner Born and raised in Brunswick Maine, Carla’s Eastman has spent the last 27 years in hospitality. Her venture began in corporate dining, where she learned the fundamentals of great service and rigorous quality standards. Over the years she honed the craft of service in a variety of eclectic establishments ranging from bustling tourist hotspots to a high-end hotel tavern. In 2020, she became a server and manager of her favorite spot to enjoy good food, great wine, and even better atmosphere. The only downfall was she wasn’t ever able to have her Enoteca date nights ever again. Shortly after starting, she brought on two of the most talented people she had ever worked with, Amy and Henry. The machine and the giant. Two fast favorites for the staff and guests. When Owner, Tim O’Brien, decided he was moving onward to other ventures in Exeter, he decided to sell. Carla & Henry having such a solid relationship as friends, figured they would make equally as solid business partners. They were so in love with Enoteca and the many guests that frequented the restaurant, there was really no hesitation. Henry’s passing in 2024 was a moment of change that brought adaptation and change front and center for Carla, that is still a challenge. Henry’s pride for Enoteca is still a constant motivator for her and the staff to keep the place as he wanted it to be, the place they first fell in love with. |
ANDREW JEPEAL
Chef Chef Andrew Jepeal was first introduced to cooking at an early age by his Italian grandmother Angelina. It didn't matter if Angelina was making fresh pasta for a grandchild's birthday celebration, preparing a holiday feast for the whole family or just making an after school snack for her grandson, she embodied the phrase "made with love". She instilled Andy with the Italian ideal of friends and family coming together over good food and drink. Andy became a lifelong student of the cuisines of the world, studying the techniques and ingredients of different cultures that highlight our similarities more than our differences. As the Chef at Enoteca Athena, Andy strives to present new and exciting dishes from Italy and Greece that rarely see the light of day in other restaurants in the area. While Enoteca will always have some of the classic standbys, his frequently changing menus and weekly specials expose friends and customers to new and exciting flavors that are steeped in the long history of classic Greek and Italian food. |
RUSSELL HEWEY
Wine Director A local of Maine, Russell Hewey has vast experience in the restaurant profession, including food and beverage management, as well as service and hospitality. Having spent much time living abroad and traveling through Europe, Mr. Hewey uses his expert knowledge and discerning palate to share his passion for food and beverage pairings, artisanal cocktail ingredients, and wine services in the hospitality industry. Constantly motivated to further his education, Mr. Hewey received his Certified Sommelier Certificate from the Court of Master Sommeliers, Americas in February of 2023, and his WSET Level 3 Award in Wine with Merit in December 2024. He is currently working on passing the Advanced Sommelier Certificate. His cocktails have been featured in publications such as Forbes Magazine, Edible Maine, Portland Press Herald, and Out & About. After acting as the Food and Beverage Director at Noble Kitchen + Bar (which, under his directorship, won a Wine Spectator Award of Excellence in 2023 and in 2024), he is now the current Wine Director for Enoteca Athena in Brunswick, ME. He is the founding member of Brunswick Wine Week, which organizes themed experiences and educational events annually in collaboration with local businesses.
